this morning’s breakfast:

Tempeh bacon and tofu “egg style” sandwich on toasted ciabatta with vanilla soy yogurt and coffee

this was the first time I ever bought tempeh bacon… I’ve made it myself before, and if you live near a TJ’s, tempeh is really cheap, like 2 bucks.   The tempeh i bought was pre-marinated from Turtle Island foods (the Tofurky people), it cost 3.99 I think (I work near a whole foods, so that’s the only way I was able to find it.)… a little more pricey, but worth the time of having to blanch the tempeh and make the marinade myself… also, Turtle Island is one of my favorite vegan food companies… their products never disappoint.

The bacon was as close to perfect as you can get with vegan bacon… it was meaty, savory, and just delicious!  My dad (aka, Ron Swanson IRL) woke up and even asked “who was cooking bacon?”, muahahahah!
